Pentose Fermentation by Lactobacillus Plantarum
نویسنده
چکیده
Extracts of Lactobucillus plantarum derived from cells grown on Larabinose contain an active isomerase, which converts L-arabinose to Lribulose (1, 2), and a ribulokinase, which catalyzes the formation of L-ribulose &phosphate (3,4). Such extracts also catalyze the conversion of L-ribulose 5-phosphate to D-xylulose 5-phosphate, which has been shown to be the key intermediate in pentose fermentation by L. plantarum (5, 6). On the basis of known enzymatic reactions, the accompanying pathway can now be written for the fermentation of L-arabinose in this organism. The conversion of L-ribulose 5-phosphate to n-xylulose 5-phosphate was first demonstrated by Wolin, Simpson, and Wood (7), with an enzyme isolated from extracts of Aerobacter aerogenes. Since the reaction catalyzed by this enzyme is similar to that catalyzed by UDPG’ 4-epimerase (8), the enzyme will be named L-ribulose-5-phosphate 4-epimerase.2 The enzyme has now been obtained in highly purified form from L. plantarum. Its properties and possible cofactor requirements will be considered.

Effects of Lactic Fermentation by Lactobacillus acidophilus and Lactobacillus plantarum on Antioxidant Characteristics and Lipase and Lipoxygenase Activities of Wheat Germs
Background and Objectives: Wheat germ is the most nutritious part of wheat grains, which has a short shelf-life due to its high lipid contents and presence of lipase and lipoxygenase enzymes. Thus, wheat germs are separated from the whole wheat grains during the flouring process, mostly used as animal foods. The objective of this study was to investigate effects of fermentation by Lactobacillus...
متن کاملTransport of D-xylose in Lactobacillus pentosus, Lactobacillus casei, and Lactobacillus plantarum: evidence for a mechanism of facilitated diffusion via the phosphoenolpyruvate:mannose phosphotransferase system.
We have identified and characterized the D-xylose transport system of Lactobacillus pentosus. Uptake of D-xylose was not driven by the proton motive force generated by malolactic fermentation and required D-xylose metabolism. The kinetics of D-xylose transport were indicative of a low-affinity facilitated-diffusion system with an apparent K(m) of 8.5 mM and a V(max) of 23 nmol min(-1) mg of dry...

Microbial cell performance in food biotechnological processes has become an important concern for improving human health worldwide. Lactobacillus plantarum, which is widely distributed in nature, is a lactic acid bacterium with many industrial applications for fermented foods or functional foods (e.g., probiotics). In the present study, using capillary electrophoresis time of flight mass spectr...
متن کاملFunctional expression in Lactobacillus plantarum of xylP encoding the isoprimeverose transporter of Lactobacillus pentosus.
The xylP gene of Lactobacillus pentosus, the first gene of the xylPQR operon, was recently found to be involved in isoprimeverose metabolism. By expression of xylP on a multicopy plasmid in Lactobacillus plantarum 80, a strain which lacks active isoprimeverose and D-xylose transport activities, it was shown that xylP encodes a transporter. Functional expression of the XylP transporter was shown...
متن کاملComplete Genome Sequence of Lactobacillus plantarum CGMCC 8198
We report the complete genome sequence of Lactobacillus plantarum CGMCC 8198, a novel probiotic strain isolated from fermented herbage. We have determined the complete genome sequence of strain L. plantarum CGMCC 8198, which consists of genes that are likely to be involved in dairy fermentation and that have probiotic qualities.
